RUBIS GOLD ® pumpkin and apple soup

The ingredients

  • 500 g butternut squash
  • 2 RUBIS GOLD® apples
  • 4 thin slices of bacon
  • 1 onion
  • 4 tablespoons of mixed seeds (pumpkin, sunflower, etc.)
  • 4 tsp of liquid cream
  • grey salt, ground pepper
  • olive oil

Preparation

    1-In a frying pan, lay the thin slices of bacon flat and without fat.

    Faites-les cuire à feu moyen jusqu’à ce qu’elles soient bien colorées. Puis déposez-les sur du papier absorbant.

    2-Peel the onion and slice it.

    3-Peel the butternut squash and cut into cubes. Peel the apples and cut them into quarters.

    4-Faites revenir l’oignon dans un filet d’huile d’olive. Ajoutez les cubes de courges et de pommes. Versez de l’eau à hauteur et portez à ébullition. Baissez le feu, et faites frémir 20 minutes à couvert.

    5-Mix, then season with freshly ground pepper and salt to taste.

    6-Serve in 4 bowls or soup plates, and place a chip of bacon, a few seeds and a drizzle of cream.
